Former pastry chef here, it’s Creme brûlée and y’all can stay mad about it 😂 the sugar is caramelized/candied, I doesn’t make a difference if it’s done ahead of time as long as the sugar is properly cooked 😂💀

Creme brûlée is a shallow dish. So you have sugar for every bit and a nice ratio. Also, thst boiling sugar will damage the custard underneath. Flame on sugar it’s still quite insulated if you go around the custard keeping temps low.
