Nostalgia in a meal 😋 SAVE my recipe for Tomato Eggs and make sure to have steamed rice ready to enjoy! Recipe: Chinese Tomato Eggs 🍅🍳 Serves 2 2 tomatoes, sliced into 6 wedges 4 large eggs, whisked 4 garlic cloves, thinly sliced 3 tbsp water 2 tbsp ketchup 1 tbsp oyster sauce 1/2 tsp sugar 1 tsp chicken bouillon 1/2 tsp soy sauce 1/8 tsp black pepper, to taste Green onions, thinly sliced for garnish Cooking oil In a small bowl combine water (yes, I forgot to add in my video) ketchup, oyster sauce, soy sauce, chicken bouillon, sugar and black pepper. Mix well and set aside. Crack open eggs into a bowl and scramble well. Set aside. In a large pan, heat oil on medium high heat and add garlic and cook until aromatic. Add sliced tomatoes sear and cook down for about 30 seconds- 1 minute on each side. Gently mash up tomatoes into bite sized pieces. Pour the sauce over the tomatoes and bring to a simmer. Spread tomatoes out evenly then pour whisked eggs around the eggs. Do not mix the eggs. Cover with a lid and cook over medium-low heat for 2-3 mins. Uncover the lid and gently food eggs over if needed to ensure eggs are cooked through. You want large curds of eggs and by cooking it on a low heat it won’t burn or over cook.
