I came across @Jess|Aggressive Tutorials video making chicken pot pie inspired meatballs and they looked so good! I could only find ground turkey at my local Kroger so Thanksgiving Dinner Meatballs is what I ended up with! They were the perfect comfort meal! Here’s how I made them… Ingredients List: * 1lb Ground Turkey * 1.5 cups Stuffing Bread Crumbs (I made these using Stove Top Savory Herb Stuffing Mix and pulsing it in my food processor until it was bread crumb like) * 1 Egg * 2 Celery Stalks (with leaves) washed and pulsed in the food processor until very finely diced * 1/2 Yellow Onion pulsed in food processor until finely diced * 1/2 Can of Peas and Carrots (drained) * 4 Cloves of Garlic finely minced (or a heaping tbls of “jar”lic) * 1 tsp Celery Salt * 1 tsp Dried Thyme * 1/2 tsp Dried Ground Sage * 1 tsp Garlic Powder * 1 tsp Onion Powder * 1 tbls Smoked Paprika * 1 tsp Black Pepper * 1/2 tsp Salt Mix all ingredients together until well incorporated. Using a large ice cream scoop portion out and form meatballs with hands so they are well packed and stay together (makes 10-12 meatballs). Cook at 400° for 40-45 minutes until cooked through. I also like to put the broiler on for 2-3 minutes just to get a little extra crust on top.
