If you don't want to save the coffee, just brew half a pot - I've started doing that, gives me about 2 cups for me (2 of my cups, not 2 of what Mr. Coffee says is a cup).

I use my leftover coffee in ice trays and freeze them so I can add them to my ice coffee. this way its not watered down with water.
