Toss the blueberries with 1 tsp of flour, then gently fold them into the batter. 6. Pour the batter into the prepared pan and bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean. 7. Transfer the cake to a wire rack and let it cool completely. 🫐 jam 1. Place the blueberries and sugar in a small saucepan. Cook over medium heat until the berries start bubbling and breaking down. 2. Blend until smooth. 3. Mix the cornstarch with a small amount of water to make a slurry. Add it to the blueberry mixture and cook for another 2–3 minutes, stirring constantly. Let the jam cool completely. Mascarpone cream 1. Whip the chilled heavy cream to soft peaks. 2. Add the mascarpone, powdered sugar, and 1–2 tbsp of blueberry jam. Whip until smooth and creamy. Once the cake has completely cooled, spread the mascarpone cream over the top.
