Instructions: 🥞 Pancake Batter: • 100g Plain flour • 30g Sugar • 2 Large eggs • 300ml Oat milk • Butter for the pan 🤎 Cinnamon Filling: • 2 tbsp Melted butter • 1 tbsp Cinnamon • 2 tbsp Sugar (Brown!) 🤍 Icing Drizzle: • 30g Icing sugar mixed with a tiny splash of lemon juice and water 👩🏾‍🍳 How to make them: 1. The Batter: In a bowl, whisk together your flour, oat milk, eggs, and sugar until you have a smooth, thin batter. 2. Cook: Heat a non-stick pan with a little butter. Pour in enough batter to thinly coat the base of the pan. Cook until golden, flip, and cook the other side. 3. The Filling: Mix your melted butter, cinnamon, and sugar to create a paste. Spread a thin layer evenly over your cooked pancake. 4. Fold & Serve: Fold the pancake into quarters.
