Colin Crum :
it was raised because you tried to sand it before putting steam to it, which removed material from around the compressed dent area. when you steamed it, the previously compressed area returned to its uncompressed state.

Using water to raise the grain and sand is a great and old technique. You do this with Danish soap finishes. With the soap finish, the soap fills pores in the wood after many applications and sanding thus giving protection (although not as much as poly finishes etc...).

Nice job. I’m not a physicist but the dents you made softened and crushed the wood grain which allowed it to absorb more water than the adjacent wood. Therefore it swelled out. Because it could absorb more water.

This works because steam causes the wood grain to expand which allows you to sand it smooth. Gun stockers use this trick to refurbish gun stocks that have been damaged.

I feel like I have known about the water/wet rag/iron technique since junior high shop class in the early 1980s.

Its coz you sanded a portion of the other material away in an attempt to conceal the dent. When you steamed it you allowed the fibres to relax back to the original shape aka pre-sanded dimension
