Cucumbers • 10 mini cucumbers • 2 to 3 tablespoons salt Dressing • 2 tablespoons gochugaru (Korean chili flakes) • 3 tablespoons rice wine vinegar • 1 tablespoon sesame oil • 1 tablespoon honey • 1 tablespoon gochujang • 2 cloves garlic, minced Optional Add-Ins • 1 tablespoon crispy chili oil • 1 teaspoon toasted sesame seeds 1. Prep the cucumbers Spiralize or thinly slice the mini cucumbers. 2. Salt & draw out moisture Place cucumbers in a bowl and sprinkle with salt. Toss well and let sit for 15 minutes to draw out excess water. 3. Rinse & dry Rinse cucumbers thoroughly under cold water to remove excess salt. Pat completely dry with paper towels. 4. Make the dressing In a bowl, mix together: • Gochugaru • Rice wine vinegar • Sesame oil • Honey • Gochujang • Minced garlic • (Optional chili oil) 5. Combine Toss the dried cucumbers with the dressing until evenly coated. 6. Finish Sprinkle with toasted sesame seeds before serving.
