@gemtakesfoodpics: Buttermilk white choc & macadamia nut pancakes 🥞🍓 Welcome back to Plates & Pours - this is your pancake day episode! If you weren’t thinking about this pancake combo before, you definitely are now. The kind of breakfast that instantly makes your flat feel cosy and the smell is sweet and warming. These are spongey, golden buttermilk pancakes, loaded with white choc + macadamia nuts, served with strawberries, maple syrup, crispy bacon (mandatory imo) and my favourite finishing touch… matcha white choc sauce and a matcha custardo (drinkable OR dippable, inspired by one of my fav wine bars Forza Wine). 
Ingredients:
200g plain flour
2 tbsp caster sugar
2 tsp baking powder
½ tsp bicarb soda
½ tsp salt
1 tsp ground cinnamon
2 eggs
300ml buttermilk
40g melted butter (I forgot to add mine until I mixed everything else so don’t forget haha)
1 tsp vanilla extract
60g white chocolate (chips or chopped)
65g macadamia nuts (roughly chopped) (OR use pre-mixed pancake mix & add in additions!! Either works) Butter for frying Method:
Add your dry ingredients in a bowl.
Add wet ingredients.
Fold through vanilla, cinnamon, white chocolate + macadamias. Gently mix.
Rest batter for 10-15 mins.
Fry on medium-low in butter. Spoon in batter.
Cook until bubbles form, flip, cook again until golden and thick.
Repeat until all the batter is used. Serve warm with maple syrup, strawberries, bacon, matcha sauce and matcha custardo. For the matcha custardo:
Warm up a little custard and whisk in a little matcha.
Optional: stir in some white chocolate. Perfect for dipping, dunking… or drinking. For the white choc matcha sauce
Microwave white chocolate with a little butter until melted, then stir in matcha powder. Drizzle all over. #buttermilkpancakes #pancakerecipe #pancakeday #brunchideas #matchadessert
