I get so confused. You described Kaluga as low salt and Osetra as brinier. But then you said the Kaluga was more like the ocean. I understood “briny” to mean salty and like sea water. Now I don’t know which to try!😫

How I’m picturing the flavors: Kaluga = more nuanced & refined, Osetra = creamy & well rounded, Seberion = salt forward stronger flavor that can stand out on anything. 💗 (Just an observation though others. I’ve never had the opportunity to compare them) yet.
