Yakhni Pulao Ingredients: • 1 kg mutton • 1½ cups soaked basmati rice • 5 tbsp oil • 2 sliced white onions • 1 tbsp ginger-garlic paste • 3–4 tbsp yogurt • 5 whole red chillies • 1 tbsp whole black pepper • 1 tbsp cumin seeds • 1 cinnamon stick • 2 green cardamoms • 1 black cardamom • 5–6 cloves • 1 tbsp coriander powder • 1 tbsp black pepper powder • 1 tbsp salt • 2½ cups warm water Method: Heat oil, sauté whole spices, then add mutton and fry until golden. Add onions, ginger-garlic paste, yogurt and red chillies; cook well. Transfer to a pressure cooker with warm water, spices and salt. Pressure cook for 10–12 minutes after the first whistle and let the pressure release naturally. Add soaked rice and cook on very low heat for 3–4 minutes after the first whistle.
