I love this fish recipe but please DON’T use Chilean sea bass aka Patagonia Tooth Fish which is very often illegally and unsustainably fished. Big trawlers cheat by scooping up the massive congregations of spawning fish which swarm together to mate - essentially killing the entire lifecycle in one go: pregnant fish who’ve yet to lay eggs, females who’ve just laid eggs who aren’t able to go on to lay another season, and all the males who are there to fertilize the eggs, and eggs that get scooped up in the mix.

I do this a lot with a whole tilapia it's really good. Frying part of the ginger and white parts of the scallion and adding sauce to the pan is also a nice touch.
