Fresh, vibrant, and full of flavor 🥒✨ This cucumber avocado salad with pomegranate, walnuts, and a touch of sumac is light, crunchy, and naturally dairy-free. The lemon and olive oil bring everything together for the perfect refreshing bite. 📝 Ingredients • 1½ English cucumbers (shaved into ribbons) or 5–6 Persian cucumbers (thinly sliced) • ⅓ small red onion, finely diced • 1 avocado, cut into small cubes • 2–3 tbsp toasted walnuts, chopped • 4–6 tbsp pomegranate seeds (about ½ pomegranate) • 3–4 tbsp fresh parsley, finely chopped • Zest + juice of 1 lemon • 2 tbsp olive oil • Salt & black pepper, to taste • 1 teaspoon sumac ⸻ 👩‍🍳 Instructions 1. Thinly shave or slice the cucumbers and place them in a large bowl. 2. Add the diced red onion and cubed avocado. 3. Add chopped walnuts and pomegranate seeds. 4. Stir in the fresh parsley. 5.
