These look ace, but for me, pancake day has to be super thin with crispy edges made from scratch and dab not from a mix. Not as good as a scotch pancake, not as good as a crepe but good enough to make you say ‘we should have these more often’ whilst knowing full well you won’t have them again until next pancake day.

Ah I love fluffy pancakes but pancake day for us has to be crepes or my children would absolutely abandon me haha. I’ll make a stack of around 30/40 tmrw in the day as reheat in the evening as we have them instead of dinner too 😂🥴
