@antonycookes: Duck and pancakes. To mark Lunar New Year I’d like to offer my thanks to China for setting my life on a different course with this dish. I tried it for the first time as an eight year old and I was transfixed by how delicious it was. The gluttonous path I’ve followed since can be traced back to that moment. I spent 48 hours preparing this, first by ladling the skin with boiling water, then salting it and rubbing it in maple syrup. It then rested in the fridge for a couple of days while the skin absorbed all that delicious salty syrup. There was five spice in the cavity. Then during cooking I basted it with honey and the hot duck fat to crisp the skin. I wanted to do the breast pink because duck is best that way. So I removed the legs and did a confit with them. I cooked them in a bath of rendered duck fat for 4(ish) hours at 90 degrees. Then I crisped them in the oven with a brush of honey over them. Your story struck a chord with me. I think every food obsessed person has their origen story incident. I have a couple of significant moments that I now look back on as foundational. when I was about 7-8 my parents would have students come and stay with us in our home on the coast. One year 'Hans',a charming 14 year old Austrian, came and stayed with us. He brought, as a gift from his parents to his hosts, a Sachertorte from one of the best bakeries in Vienna. It forever changed in my mind what was possible in the way of flavour and refinement. It was revelatory. I could also point to a trip to France when I was 11 when I realised what cheese could be and the pleasure of Bouillabaisse.And finally the realisation one afternoon in Hong Kong aged 17 with a rudimentary drainage system running between the legs of the plastic chair I was sitting on eating a noodle soup with a goose neck sausage with the head still attached, when I realised this might be the happiest I've ever been. Great food, can be, for the lucky few, a meaningful filter to view all life through. And the good news: It's pretty much life long! No matter how much anybody has tried there is always more on the horizon. I still haven't tried Goose neck barnacles or Balmain bugs
