when I interviewed at my previous job it was scheduled for 12:30, had to wait 30 mins for the person to show up. after being hired I learned 12:30 is when everyone takes their lunch break, like why would you schedule it then???

As a lead that helps with the hiring process for new hires, it is almost always someone scheduled the interview without looking at the hiring managers schedule and if it WAS the hiring manager, they shouldn't be a manager bc how do you not know your own schedule?
