If you’re wondering… no, this cake is NOT bitter. 🍊 It’s the number one question I get whenever I make a cake using the whole orange, peel and all. The result is an incredibly moist, soft cake that’s bursting with fresh orange flavor, not overly sweet, and made in minutes with just a handful of pantry staples. What are you waiting for? Use a blender or food processor Ingredients: * 1 large organic orange * 3 large eggs (room temp) * 1/2 cup sugar (100 grams) * 1/2 cup oil (120 ml) * 1 and 1/2 cups self rising flour (210 grams) or AP flour with 1 tsp. baking powder. * OR 2 cups almond flour (190g) + 1 tsp baking powder For the orange icing: * 1 cup powdered sugar (150 g ) with 1/2 orange squeeze Instructions: 1. Wash the orange thoroughly. Cut it into pieces with the peel, remove seeds if any. 2. Blend the orange pieces with the sugar until blended. 3. Add the eggs and oil, blend again. 4. Add the flour and pulse two times, do not over blend the flour ! 5. Pour batter into a greased baking pan of your choice. 6. Bake in a preheated oven at 350° f (177c) for 45-50 minutes. 7. Do the toothpick test to check if it’s ready. 8. Prepare the icing by combining the powdered sugar and orange juice in a bowl and mixed together. If you like the icing a little more runny, then add more orange juice and if you like it more thick, less orange juice. 9. Once the cake has called completely spread the icing over the cake and top with some orange zest. 10. Enjoy at room temperature.
