@albinasveganfood: It’s cold and rainy so I made a big pot of something warm and cozy😋🍲 Save to try later🥰🤗❤️ Vegan Chicken Soup Ingredients: • 8 cups vegetable broth (about 2 L) • 1 can young jackfruit, rinsed and shredded (about 400 g / 14 oz) • 1 cup pasta (about 100 g) • 2 celery stalks, diced • 2 carrots, diced • 1 small onion, diced • 3 garlic cloves, minced • 2 bay leaves • 1 small bunch fresh parsley, chopped • Salt, black pepper, spices and herbs to taste How to make: 1. Shred jackfruit with your hands or a fork to create a chicken-like texture. 2. In a pot, sauté onion, carrots, celery, and garlic until softened and fragrant. 3. Add jackfruit and cook for a few minutes. 4. Pour in broth, add bay leaves, salt, pepper, spices and herbs, then bring to a simmer. 5. Add pasta and cook until tender. 6.
