@campusmama: Pilau Series: Episode 6 - Pilau Njeri Welcome to yet another episode of my pilau series. Today we’re going to murima with this yummy pilau Njeri. This dish brings back so many childhood memories 🥹🥹. This was our go to lunch dish on most days. You’ll need * Potatoes * Green peas (minji) * Carrots * Green bell pepper * Green chillies * Tomatoes * Tomato paste * Pilau masala * Turmeric - Fry your onions and garlic till fragrant then add in your spices. Mix and fry the spices to bloom them -Go in with your tomatoes and tomato paste. Mix then cover to let the tomatoes cook and soften -Add in your peeled and washed potatoes as well as your carrots. -Mux then add in some water and a tsp of salt. Cover and let the potatoes boil and soften just a little. Dont overcook them -Add in the minji (peas) as well as your washed basmati rice. Adjust for salt mix then cover to cook -Once most of the water has evaporated go in with your green bell pepper, mix again then cover to let the rice finish cooking -Once ready fluff it up with a fork and serve with your favorite sides.
