Anyway, the recipe: Ingredients 200 g cottage cheese 3 medium eggs 70 ml whole milk 1 tsp vanilla extract 1 tsp maple syrup 1 tsp melted butter 130 g plain flour ½ tsp baking powder ½ tsp baking soda Pinch of salt Handful of blueberries ⸻ How To Make It Add the cottage cheese Eggs Milk Melted butter Vanilla extract Maple syrup Give it a cheeky Mixy Mixy In a separate bowl add the flour Baking powder Baking soda Pinch of salt Add the blueberries Mixy Mixy again Now combine the wet and dry Tablespoon of mixture into a frying pan on medium heat Wait until the bubbles start to show Give it a flip Cook the other side You’re done Top it with whatever you fancy Yoghurt Extra blueberries More syrup if you’re feeling feral ⸻ Macros for the full batch were roughly ~ 1,090 kcal ~ 72 g protein ~ 120 g carbs ~ 38 g fat So the stack shown in the video Is About one third ~ 360 kcal ~ 24 g protein Not bad for Pancake Day scran with the wee man. Development educator here, can I just say you’re doing amazing, dad! The way you let him do things and try even if it’s not perfect or becomes messy. (Or extra vanilla flavored) is so incredibly important. You’re raising a little boy who will develop into a child who can problem solve and more importantly who is confident.
