@mealswithmax: Moussaka 🇬🇷 Ingredients: 500g lamb or beef mince 1 large onion 3 cloves garlic 400g tin chopped tomatoes 2 tbsp tomato paste 120ml red wine 1 tsp ground cinnamon 1/2 tsp ground allspice 1 tsp dried oregano 1 bay leaf Salt Black pepper Olive oil 2 aubergines Béchamel sauce: 70g butter 70g plain flour 700ml whole milk 2 egg yolks 50g grated parmesan 1/4 tsp nutmeg Salt White pepper ——— Method: 1. Slice the aubergine lengthways, about 1 cm thick. Salt the slices and leave for 30 minutes. This removes bitterness and improves texture. Pat dry. Brush with olive oil and roast at 200°C for 20–30 mins until soft and golden. 2. Heat olive oil in a large pan. Dice the onion and cook for 5–7 mins until soft. Add the garlic and cook for 1 min. 3. Add lamb or beef mince, season with salt and pepper, cook until browned. Pour in the wine and let it cook off for 2-3 minutes. 4. Now add tomato paste, chopped tomatoes, cinnamon, allspice, oregano and bay leaf. Simmer gently 30–40 mins until thick. Remove bay leaf. 5. Melt the butter in a saucepan, add the flour and cook for 2 minutes. Gradually whisk in warm milk, cook until thick and smooth. Remove from heat. Whisk in egg yolks, Parmesan, nutmeg, salt and white pepper. It should be thick and creamy. 6. In baking dish layer half the aubergines, lamb sauce, remaining aubergines and finally the béchamel. Smooth the top evenly. 7. Bake at 180°C for 45-50 mins, the top should be golden. Let it rest at least 30 mins before cutting. As a Greek who gets mad when ppl online butcher classics, well done!!!! We like to fry the aubergines but it’s way healthier to roast them ! Also no Parmesan’s in Greece but some regional cheese but overall excellent execution and spice choices
