I swear it tastes better… and it has veggies in it! - steamed beets (sooo yummy) - beet hummus (steamed beets, tahini, garlic, salt, olive oil, other spices if you desire- I like cumin) - beet picked eggs (soft boiled eggs if you don’t forget about them like me, beet water, salt, and a little vinegar set overnight) - purple rice (2 cups finely diced purple cabbage, 1 cup rice, 2 cups water, flaky salt, 1-2 tbsps ghee or coconut oil) - purple and black potatoes (soo gorgeous- bake until slightly crisp at 425 or slow roast whole) - watermelon radish (could also pickle) - pickled red onions
