@samisavor1: Easy Baked Chicken Tacos 🌮 These were so delicious, my family loved it 😍 📖Ingredients: Chicken Filling: 500g chicken breast, diced small Salt, to taste 1 tbsp smoked paprika 1 tsp garlic powder ½ tsp black pepper 1 tsp oregano ½ tsp cayenne pepper (optional) 3 garlic cloves, minced 1 cup diced bell peppers ½ cup cooked corn 1 small onion, diced 1 tsp chipotle paste 1 tbsp tomato paste 1 tbsp lemon juice 1 fresh chilli chopped (optional) 4 tbsp cream cheese ¼ cup water 1 tbsp olive oil (plus more for cooking) For Assembling: 1 cup shredded cheese 8-10 mini flour tortillas Avocado dipping Sauce: 3 tbsp Greek yogurt 3 gloves of garlic 1 avocado 2 tbsp lime juice Fresh coriander/parsley Fresh Basil 1 tbsp olive oil Salt & pepper to taste Instructions: Cook the Chicken 1. In a bowl, mix chicken with all seasonings and 1 tbsp oil. 2. Heat a pan over medium heat with a little oil. 3. Cook the chicken for 3–4 minutes. 5. Stir in onion, garlic, bell peppers, corn and fresh chopped chilli. Cook until vegetables soften and chicken is fully cooked. Make It Creamy 1. Reduce heat. 2. Add cream cheese, tomato paste, chipotle paste, lemon juice, and water. 3. Stir until melted and creamy. 4. Simmer briefly if needed to thicken. Adjust salt if needed. Let it cool completely. Assemble & Bake 1. Preheat oven to 400°F (200°C). 2. Brush one side of each tortilla with oil. 3. Place filling on the dry side, sprinkle cheese on top, and fold closed. 4.
