The way you say it changes so instead of saying it like you did at the beginning it would be more "The old.. man the boats" instead of "The old man.. the boats"

For the 2nd one I thought the phrases ”The man who hunts” and” ducks” were the subject and verb respectively, and I thought “on the weekends” followed as the prepositional phrase.
