They are made with super simple ingredients but they are so rich, soft & fudgy. Makes 16 servings: ~110 calories, 4g protein, 10g carbs, 7g fat each Ingredients: - 3 very ripe bananas, mashed - 1/4 cupĀ peanut butter or almond butter - 1/4 cupĀ melted coconut oil - 3 tbspĀ maple syrup - 1 tspĀ vanilla extract - 2 eggs at room temp - 1/2 cupĀ unsweetened cocoa powder - 1/2 cup unsweetened collagen (optional, I love Promix collagen peptides to add protein and health benefits - discount code āCLAIREā) - 1 tbsp cornstarch or arrowroot starch - 1/2 tspĀ baking soda - Pinch of salt - 1/2 cupĀ mini semi sweet chocolate chips - Optional: flaky sea salt for topping How to: - Preheat oven to 350F. Lightly grease an 8x8 baking dish with coconut oil. - Add the bananas to a mixing bowl and mash very well so there are no chunks. - Add peanut butter (or almond butter), melted coconut oil, maple syrup and vanilla extract. Stir until well combined. - Crack the room temperature eggs in a separate bowl and whisk. Make sure that they are room temperature or they will make the coconut oil solidify. To do this quickly, set eggs in a bowl of warm water for 5 minutes. - Stir the eggs into the batter until well combined. - Add cocoa powder, collagen powder (if using), cornstarch, baking soda and salt to the bowl. Stir well. - Fold in chocolate chips. - Pour into the pan and bake for 22-25 minutes. The edges should be set but the center will feel slightly soft. - Let cool, then slice and enjoy!
