in the US if you buy commercial kombucha in a store it's probably made by one or two very large manufacturers, who then repackage it in a huge number of ways for different vendors. their tank sizes are enormous relatives to even big breweries.

Pretty much every commercially available kombucha these days has been pasteurized and the fermentation has been stopped.
