Idk let’s see how long I last lol ♥️ Healthy Chicken Tortilla Soup 🍜  Ingredients For the soup base: * 1 jalapeño, halved + deseeded * 1 small white onion, quartered * 4 garlic cloves, peeled * 3 Roma tomatoes * 2 dried guajillo chiles, stems + seeds removed * 1 dried ancho chile, stems + seeds removed  * 1 tbsp tomato paste * ½ packet taco seasoning * 1 cup chicken broth (for blending) For the soup: * 1–1.5 lbs chicken breast * Seasoning of your choice  * 6 cups low-sodium chicken broth * 1 bay leaf * 1 cup corn, drained * 1 can black beans, drained + rinsed * Small can of green chiles  * 2 limes (for finishing) Optional toppings:
Tortilla strips, avocado, cilantro, cheese, extra lime Instructions 1. Season & sear the chicken 1. Pat chicken dry and season with seasoning of your choice. I used garlic powder, onion powder, smoked paprika, chili powder, cumin, salt  2. Heat a large skillet over medium-high. 3. Add a small drizzle of oil. 4. Sear chicken 2-3 minutes per side until lightly browned (doesn’t need to be cooked through). 5. Remove chicken and set aside. 2. Char the vegetables & chiles Using the same skillet: 1. Add:     * jalapeño     * onion     * garlic     * Roma tomatoes     * dried guajillo + ancho chiles 2. Cook over medium-high, flipping occasionally, until everything is charred, about 5–8 minutes. 3. Pour 1/2 cup of chicken broth in pot and simmer everything together for 5 minutes.  3. Blend the soup base Add to a blender: * Charred jalapeño * Onion * Garlic * Tomatoes * Rehydrated guajillo + ancho chiles * ½ packet taco seasoning * 1 cup chicken broth Blend until completely smooth. 4. Build the soup 1. Add 1 tbsp of tomato paste to pot and cook for 2-3 minutes. 2. Pour the blended base into a large pot through a sieve.  3. Add remaining chicken broth (about 5 cups). 4. Add the seared chicken breasts and bay leaf. 5. Bring to a boil, then reduce heat and simmer 20–25 minutes, until the chicken is cooked through. 5. Shred the chicken 1. Remove chicken from the pot, shred it, and return it to the soup. 2. Add corn and black beans. I also added a small can of green chiles.  3. Simmer another 5-10 minutes to let flavors meld. 6. Finish * Squeeze in fresh lime juice to taste. * Season with additional salt/pepper if needed.
