@the.body.healer: Homemade Dijon mustard is more than just a flavor booster. Made from simple ingredients, it adds sharpness to meals while supporting digestion especially rich, heavy foods. Ingredients ¼ cup yellow mustard seeds ¼ cup brown mustard seed ½ cup vinegar (red wine vinegar or apple cider vinegar both work) ½ cup water ¾ tsp salt ¼ tsp honey (optional) Instructions Add the mustard seeds, vinegar, and water to a glass jar. Cover and let the mixture soak at room temperature for 24 hours, until the seeds soften and absorb the liquid. Transfer the mixture to a blender or food processor. Add salt and honey. Blend until smooth or slightly grainy, depending on your texture preference. Taste and adjust seasoning if needed. The mustard will thicken and mellow after resting in the fridge for 24–48 hours.
