Heat the oil in a heavy pot over medium heat. Whisk in the flour and cook, stirring constantly, for 20–30 minutes until it reaches a deep chocolate-brown color. Don't let it burn. Cook the vegetables. Stir in the onion, bell pepper, and celery. Cook 5–7 minutes until softened. Add the garlic and cook for 1 minute. Build the gumbo. Slowly whisk in the stock. Add tomatoes (if using), bay leaves, thyme, paprika, cayenne, Cajun seasoning, Worcestershire sauce, and okra. Bring to a simmer and cook for 45–60 minutes. Add the seafood. Add shrimp and cook 3–5 minutes. Gently fold in the crab and oysters, if using, and cook another 2–3 minutes. Remove the bay leaves and adjust seasoning. Serve. Spoon over cooked white rice. Garnish with green onions and parsley. Offer filé powder at the table if desired. Tips for Great Gumbo The darker the roux, the richer and more authentic the flavor. Add seafood only at the end to prevent it from becoming tough. Gumbo often tastes even better the next day after the flavors have melded. A few dashes of your favorite hot sauce at the table add a nice kick.
