Anytime I let mine bulk ferment more than 5-6 hours it’s overproofed and bakes like SHIT. house sits at 67-70 degrees

I LOVE the slow motion filming of your bulk fermentation. I was just wondering the other day if you had ever filmed it. The sweet spot for me is when my dough has that almost marshmallow fluff texture, but it’s not sticky to the touch. I always stop and watch when you come up on my FYP. 🥰
