@cocolarkincooks: I love when I stumble across a dish like this and it’s one of the reasons I thrift and collect old cook books. I had never heard of this one, Eggs Orsini, but it was so perfect. The white puff up like a soufflé and the egg yolks are rich and…should.. remain a bit runnier than mine. The cheese gives it a beautiful golden crust. You will love this one. Make sure to serve it immediately.
these went viral under the name "cloud eggs" in 2020. glad you're calling it by its original name.

Eggs Orsini… I have eaten this everyday for 51 years and simply called it Aunt Verna’s eggs. It’s made exactly as you did, but the timing was 10 to 14 minutes. The yolks are soft and runny.

A tip: I first pre-cook the egg whites for 4 to 5 minutes at 200 degrees Celsius, then add the yolks and cheese for 1 to 2 minutes. The yolks turn out perfectly.
