50g Light Butter, Softened
1 Medium Egg
5mL (1 tsp) Vanilla Extract (optional) ✳️ Dry Ingredients: 90g (¾ Cup) All Purpose Flour
60g (~2 Scoops) Vanilla Casein Protein Powder
15g (½ Scoop) Vanilla Whey Protein Powder
140g Brown Sugar Substitute
40g Granulated Sugar Substitute
8g (1 tbsp) Cornstarch
3g (½ tsp) Baking Soda
2g (½ tsp) Baking Powder
2g (½ tsp) Salt Note: You must use casein protein, if you don’t then you need more flour. Casein is very water absorbent so it’ll be too wet without it…add flour until you get my texture in video if using no casein. ✳️ Mix-Ins: 28g (2 tbsp) Chocolate Chips or Chunks
Extra Chocolate Chips/Chunks (*optional*) Optional stuff is not included in macros ✳️ Directions: 1. Preheat the oven to 350°F and line a baking sheet with parchment paper. 2. Add the Greek yogurt, softened light butter, brown sugar substitute, and granulated sugar substitute to a bowl. Mix until as smooth and creamy as possible. 3. Mix in the egg and vanilla extract. 4. In a separate bowl, combine the flour, casein, whey, cornstarch, baking soda, baking powder, and salt. 5. Add the dry ingredients to the wet ingredients and mix until a thick cookie dough forms. Add some flour to hands if needed to form into a ball. 6. Fold in the chocolate chips or chunks. 7. Chill the dough for 30 minutes. 8. Divide the dough into 6-8 cookies, place them on the baking sheet, and lightly flatten each one. 9. Bake for 9–12 minutes, until the edges are set and the centers still look slightly soft. 10. Let the cookies cool on the baking sheet for 10–15 minutes.
