Business in the UK can refuse legal tender (cash/coins) and insist on other payment methods. "Legal tender" only implies that, if a debt exists, offering it prevents legal action for non-payment; it does not mean a retailer must accept it for a transaction.

The problem with this is the original payment WAS accepted. Assuming this is true, Sainsbury's are 100% in the wrong. If this is not the case, then it depends. However, the officer giving sainsburys customer data is 100% illegal
