These hit the spot when I want a savoury snack at my desk, plus because they offer 20% of your daily fibre recommendation and 13g protein per 2 pieces, so you really can feel a bit smug while snacking on them. Smoked paprika works well but you could mix up the flavours too - try garlic powder or dried herbs, even lemon zest and pepper. Commenting this for myself later: For the easier option:
Toss the chickpeas in a roasting tin/air fryer basket with the smoked paprika and a 1 tsp oil. Use a spoon to push them close together in a square or rectangle shape. Sprinkle the cheese over the top, add a generous pinch of salt and bake for 20-25 minutes until the cheese is golden brown. Leave to cool before slicing into 6 pieces.
For crisper option:
Toss the chickpeas in a roasting tin/air fryer basket with 1 tbsp oil. Space out and bake for 20-30 minutes until brown and crunchy.
Remove from the oven, toss with the smoked paprika and use a spoon to push them close together in a square or rectangle shape. Sprinkle the cheese over the top, add a generous pinch of salt and bake for a further 10 minutes until the cheese is brown. Leave to cool before slicing into 6.
Store in an airtight container and eat within 2-3 days.
