Just one tiny suggestion. Cook the andouille sausage first. Then cook the chicken. The fat that has rendered from the sausage will flavor up the chicken. Then follow up with the rest of the recipe. I personally use celery as part of my Holy Trinity but realize some people don’t like celery.
