Bitter orange (naranja agria) is normally used to make mojo but if you can’t find it, try substituting a combination of orange, grapefruit & lime. The chicken gets unbelievably flavourful, stays super juicy & develops a beautifully crispy skin. It's incredible alongside some crispy tostones (twice-fried green plantains), a simple avocado salad & some Cuban-style black beans, but equally delicious with some sweet fried plantains, steamed rice or yuca .
