Prep: Freeze the ribeye for 30–45 minutes (optional) to make slicing easier, then slice it as thin as possible. Dice ½ small yellow onion. Cook: Heat a flat top or cast iron over medium-high. Cook the onions in a little neutral oil with salt + pepper (or Midwest Fresh seasoning) until soft and lightly caramelized, then remove. Sear 8–10 oz thinly sliced ribeye in an even layer until a crust forms before seasoning generously. Flip, chop, and cook until just cooked through. Add the onions back, top with 4–6 slices sharp white American cheese (Cooper Sharp if you can get it), cover and let melt, then chop and mix until everything is coated in cheesy goodness.
