In a microwave-safe bowl, combine honey and peanut butter. Microwave 30 seconds, stir, then microwave another 15–20 seconds until smooth and fluid (do not boil). 2. Stir in the pinch os salt and rolled oats first and mix until fully coated. 3. Gently fold in the rice cereal. 4. Divide evenly into 12 mini muffin cavities. Press down very firmly using the bottom of a small glass or spoon. 5. In a small bowl, melt chocolate chips with 2 teaspoons peanut butter (30 seconds, stir, then 10–15 seconds more if needed). 6. Spoon the melted chocolate over each cup. 7. Refrigerate for 90 minutes, or freeze for 20–25 minutes until set. 8. Sprinkle flaky salt before serving if desired. ⸻ Storage • Store in an airtight container in the refrigerator for up to 7 days. • Freeze for up to 2 months. • Let sit at room temperature for 3–5 minutes before eating for the best texture. ⸻ Tips for Best Texture • Make sure the honey and peanut butter are fully melted and smooth before adding dry ingredients. • Mix oats in first so they absorb moisture properly. • Fold rice cereal gently to keep it crunchy. • Press very firmly — compacting is key for clean slices. • Chill fully before removing from the mold. ⸻ No refined sugar.
