This is how we turn prawn shells into liquid gold 🤌✨ 🦐 For the Prawn Stock: • Prawn shells • 2 tbsp tomato paste • Carrot, onion & celery • Cold water + ice cubes 🍝 For the Pasta: • 2 tbsp butter • Peeled prawns • Salt & pepper • 1 tsp minced garlic • 1 tsp finely chopped fresh chilli / chilli flakes • 2 cups prawn stock • 1 cup thickened cream • ½ cup canned tomatoes • 250 g spaghetti • Finely chopped parsley • Parsley & chilli oil (to finish) 1️⃣ Sauté prawn shells in a little oil until deeply red and fragrant. Stir in tomato paste and cook it out properly. 2️⃣ Add roughly chopped carrot, onion and celery. Cook until lightly caramelised. 3️⃣ Pour in cold water with a few ice cubes (this helps extract flavour). Simmer gently until vegetables are soft. 4️⃣ Blitz everything, strain well, then reduce the stock until rich and concentrated. 5️⃣ In a separate pan, melt butter and quickly sear prawns. Season, then remove and set aside. 6️⃣ In the same pan, sauté garlic and chilli until aromatic. 7️⃣ Add prawn stock, cream and canned tomatoes. Season and let it reduce slightly. 8️⃣ Boil spaghetti halfway, then finish cooking it directly in the bisque sauce. Add extra stock if needed. 9️⃣ Return prawns to the pan. Finish with parsley and chilli oil. #prawn #bisque #seafood #pasta #homecooking
