@seattlehanddoc: Homemade Chicken Caesar Salad Wrap Breaded Chicken 4 pounds chicken thighs/breast Kosher salt 2 cup extra-virgin olive oil 2 cups all-purpose flour 8 large eggs, beaten 2 cups panko bread crumbs 1 1/2 cup grated Parmesan 2 tbsp salted butter Maldon salt Directions: Liberally salt chicken on both sides. Place flour and beaten eggs into separate shallow dishes. Combine panko and Parmesan in a 3rd dish. Dip a chicken thigh in flour, then in eggs. Then in panko/parm and transfer to a baking sheet. In a large skillet, melt butter and oil over medium-high heat. When oil is hot, fry 2-4 cutlets at a time until bottoms are golden, about 3 minutes. Flip and fry until golden and crispy all over, about another 3 minutes. Transfer to a paper towel-lined plate. Sprinkle immediately with maldon salt. THE Best Cheesy Croutons @A Pinch of Yum Ingredients: • 1 baguette, cubed (about 8 cups) • 1 cup olive oil • 1 cup nutritional yeast • 1½ tsp salt • 1½ tsp garlic powder Instructions: 1. Preheat oven to 425°F (220°C). 2. Place bread cubes in a large bowl. 3. In a small bowl, whisk together olive oil, nutritional yeast, salt, and garlic powder. 4. Pour over the bread cubes and toss well to evenly coat. 5. Spread on a parchment-lined baking sheet and bake for 10–15 minutes, or until golden and crisp. Caesar dressing - 8-12 anchovies - 1 cup mayo - 3 clove garlic, throw in whole - [1-2 juiced lemons (or more to taste) - 1 tsp white wine vinegar - 1 1/4 cup grated parmesan - 1 teaspoon Worcestershire sauce - Fresh ground black pepper, to taste - Salt to taste Blend everything together in a Cuisinart, adjust to to taste… more or less of all ingredients!
