Pro move: When frying food it's wise to cover up your arms so you don't end up with a full sleeve of burns. @FORLOH raider half zip is so lightweight and breathable, and the front and back pocket is so handy for my knife on mushroom hunts! I also love this as a base layer with the high neck and long sleeves! . . Enoki Tempura  Ingredients:  * 150 ml cold water * 100 ml cold carbonated water * 100 g cake flour (3/4 cup) * 30 g cornstarch (1/4 cup) * 1 egg * A few ice cubes * Enoki mushrooms, trimmed and separated into small bundles * Neutral oil (vegetable or canola) for frying * 1 cup cake flour (for dredging) Directions 1. Trim the root ends of the enoki mushrooms and separate them into small clusters. 2. Crack the egg into a bowl and whisk lightly until just combined. 3. Skim off any excess watery foam or clear liquid from the top of the egg. 4. Add 150 ml of cold water and 100 ml of cold carbonated water to the egg, then drop in a few ice cubes to keep the mixture very cold. 5. In a separate bowl, mix 100 g of cake flour and 30 g of cornstarch. 6. Pour the cold egg mixture into the dry ingredients and stir gently with chopsticks or a fork making an x motion, leave the batter slightly lumpy and avoid overmixing. 7. Place about 1 cup of cake flour in a shallow bowl or plate and lightly dredge the enoki clusters, shaking off any excess to help the batter adhere. 8. Heat neutral oil in a deep pan to 170–180°C (340–355°F). 9. Dip the floured enoki clusters into the batter, letting the excess drip off before carefully lowering them into the hot oil. 10. Fry until light golden and crisp, about 1–2 minutes. 11. Remove and drain on paper towels or a wire rack. 12. Sprinkle lightly with salt or serve with a dipping sauce. 13.
