I don't think couch Dooku really understood the full scope of palpatine's plans until he was defeated by Anakin in that moment. I think Dooku really believed deep down about defeating the Republic. I think Palpatine manipulated Dooku using his hate of the Republic, in a similar way to how he manipulated Anakin
