I'd say calas were the more common and economical preparation in New Orleans for a long time. The French/Europeans have had fried wheat flour dough since the middle ages, but rice was/is the primary grain grown in our region and flour was a pricier ingredient that would need to be imported. Hard to find prices for the early era, but if beignets were 10 cents and calas were 5 cents(or 2 to 1 picayunes) it just makes sense for a majority of the population to make/buy calas, especially at home as it was a great way to use leftover cooked rice.

It was really good! I just wish outsiders would let more locals/Creole people help them tell our own stories. I went with my mom and we shared a few things with him regarding its origins. Hopefully he includes that now too

I just looked this up, and they’re naturally gluten free. Can’t wait to go!🙏🏽 I love New Orleans, but not being able to eat beignets literally makes me cry every time.😂 Seriously, I think this will be my bday trip this year.😋
