@dana_conway: When a pie and a cookie fall in love❤️❤️Welcome back to “Single, but cooking like someone’s falling for me tonight.” Who’s hungry?👀 Cookie Dough Pie Ingredients • 450g plain flour • 10g cornflour • 200g cold unsalted butter, cubed • 80g icing sugar • 1 tsp fine salt • 2 large eggs • 1–2 tbsp cold water (if needed) • 140g unsalted butter, browned and cooled • 60g unsalted butter, melted • 200g dark brown sugar • 40g caster sugar • 1 large egg + 1 egg yolk • 2 tsp vanilla • 280g plain flour • ½ tsp bicarbonate of soda • ¾ tsp fine sea salt • 1 tsp espresso powder • 120g milk chocolate chunks • 120g dark chocolate chips • Extra chocolate chips, for topping • Flaky sea salt, for finishing Method 1. Rub butter into flour and cornflour until breadcrumb-like. 2. Stir in icing sugar and salt. 3. Add eggs and mix to a dough, adding a little cold water only if needed. 4. Roll out, line a 10-inch pie dish, crimp edges, and chill 20 minutes. 5. Dock the base, line with paper and baking beans, and blind bake at 180°C fan for 15 minutes. 6. Remove beans and paper, bake 5–7 minutes more until base looks dry and lightly golden. Cool slightly. 7. Whisk browned butter, melted butter, dark brown sugar, and caster sugar until smooth. 8. Whisk in egg, yolk, and vanilla. 9. Fold in flour, bicarbonate of soda, salt, and espresso powder. 10. Fold in chocolate chunks and chips. 11. Spread filling into the blind-baked crust and smooth the top. 12. Scatter extra chocolate chips over the surface. 13. Bake at 170°C fan for 40 minutes until edges are set and centre is soft but baked through. 14. Sprinkle with flaky sea salt and cool fully before slicing #cookiepie #fyp
