Lentil Sloppy Joes I know you're probably thinking...here's Amy with yet another tinned lentil recipe...but I'm actually a bit obsessed with them at the moment! It's like magic that you can turn something so cheap and basic like a tin of lentils, into a proper delicious dinner. So I can't stop doing it! I know I've shared a lot of veggie recipes lately, so thank you for being patient. I seem to have found myself in a kind of semi meat free era...and I'll be honest I don't hate it Did you know that nearly half of the recipes in my new cookbook SPEEDY 10 are accidently vegetarian? Amy x Feeds 4-6 (makes enough lentil filling for 6 buns) Oil for frying 1 onion finely chopped 1 red pepper finely chopped 2 cloves garlic finely chopped 1 tsp paprika 1 tsp brown sugar 2 cloves garlic finely chopped 400g tin of green lentils, drained and rinsed 400ml passata 1/2 tsp dijon mustard 1 tbsp tomato ketchup 1/2 tsp ground black pepper 4-6 brioche buns A large handful of grated cheese 30g butter 1 tsp dried parsley 1/2 tsp garlic puree Salt Heat a drizzle of oil in a large, non-stick frying pan. Add the onion and red pepper and fry on a medium heat for 5 minutes until soft. Stir in the paprika, brown sugar and garlic and fry for another minute. Add the drained green lentils, passata, mustard, ketchup and black pepper. Season with salt. Bring to the boil before simmering on a medium heat for 5-7 minutes. Heat the oven to 180C fan Line a small baking tray and place the bottoms of the brioche bun on there. Divide the lentil filling between the buns (If you're only using 4 buns you won't need all the filling) Top with grated cheese and place the lids on the buns/ Mix together the butter, parsley and garlic paste. Microwave for a few seconds until melted. Brush the tops of the buns with the melted butter. Bake in the oven for 10 minutes until the cheese has melted.
