![Avocado Tuna Handrolls 🥑June is California Avocado Month (although I think every month should be California Avocado Month)! So to celebrate peak @California Avocados season, I’m sharing my go to quick dinner recipe for when I’m in a time crunch and only have 30 minutes to get dinner ready [ad] Ingredients (4 servings): * 1 1/2 cups sushi rice, uncooked * 2 tbsp seasoned rice vinegar * 3 (5 oz.) cans tuna, drained * 2 mini cucumbers, diced * 2 green onions, sliced * 1/4 cup Japanese mayo * 3 tbsp soy sauce * 1 tsp sesame oil * 2-3 tsp chili sauce (depending on spice tolerance) * sesame seeds, optional * 2 ripe, Fresh California Avocados, seeded, peeled and sliced * 1 pack of nori * furikake, optional Directions: 1. Cook the rice according to package directions 2. Once the rice is done cooking, let it cool, then mix in seasoned rice vinegar 3. In a mixing bowl, add tuna, cucumbers, green onions, Japanese mayo, soy sauce, sesame oil, chili sauce, sesame seeds, and mix together 4. Take half a sheet of nori, spread rice on 1/3 of the nori, top with furikake, then spread tuna mixture over rice, top with California Avocado slices and roll 5.
