It's a nice throwback to season 1 when Stark went cloud watching. It's a hobby he enjoys, and the impromptu cloud watching wasn't part of the date he had planned out with Frieren (they just ended up there after a long day of walking). So, for Fern, the best part of the date was the part where Fern and Stark did something that he genuinely enjoys (as opposed to being artificially tailored to her own preferences, with the helpnof Frieren). She no doubt enjoyed the date, but she also wanted him to enjoy it, too.
