@aelencooks: Carne en su Jugo Recipe: 2lb carne, diced (I used Beef Loin Flap Steak) 1/2 packet of bacon 8-10 tomatillos 4 chiles güeros (Optional: 1-2 Serrano for spice) 1 onion or 3 Mexican onion (this is what I had) 4 garlic cloves Cilantro 1-2 tbsp chicken bouillon Salt & Pepper to Taste 1. Dice your bacon into small pieces. In large sauté pan, add in your bacon and cook until crispy. Remove & save for later. 2. In the same oil, add in your tomatillos, onions, & chiles. Cook for a few mins until tomatillos change color & chiles look nicely cooked (look at video for reference.) remove. 3. Remove 90% of bacon fat, add in your carne, add your salt & pepper. Cover. You want to keep the juices! So this step is very important 4. In your blender, add in your tomatillos, 1/2 of chile güeros, 1/2 of your onions, cilantro, chicken bouillon, & 1/2 c water. Blend. 5. Add your salsa into your carne and let it cook on low heat for 25-30 mins. Add in the rest of your onion, chile güeros, half of your bacon, & cook on low for another 5-10 mins until tomatillos or until you carne is tender. 6. Serve with frijoles (Mexican rice, is optional) & tortillas. Top with cilantro, onion, crema mexicana, queso fresco, bacon & rábanos! 7.
