Heat oil in a large pot over medium heat. 2. Cook chicken until lightly browned. 3. Add onion and cook 3–4 minutes. 4. Add carrots, potatoes, and water. Bring to a boil. 5. Skim any foam, then cover and simmer for 15–20 minutes until vegetables are tender. 6. Turn off the heat. Break in the curry roux blocks and stir until fully dissolved. 7. Return to low heat and simmer 5–10 minutes, stirring occasionally, until thickened. 8. Serve over cooked white rice.
