Welcome to Kids Can Eat That Too, a series where I share easy family dinners packed with sneaky nutrition and ingredients we don’t normally associate with kids’ meals.  This Mediterranean vegetable sausage pasta is one of my kids’ favourites. It’s rich, comforting, and packed with 7+ plants including aubergine and courgette, but blended into a velvety pasta sauce. What’s one ingredient your kids “won’t eat”? I might try sneaking it into a future episode ;) Save this for an easy family dinner that works for both kids and adults and follow for more! ❤️ RECIPE Ingredients:  6 pork sausages 1 bag frozen Mediterranean vegetables 1 tbsp frozen chopped onion 1 tbsp frozen chopped garlic 1 bag cherry tomatoes 1 chopped red onion Olive oil Salt & black pepper 1 tbsp mixed herbs 250g pasta 1 heaped tbsp full-fat cream cheese Splash of pasta cooking water Parmesan, to serve Method: 1. Preheat oven to 200C 2. Add Mediteranean veg, tomatoes, onion and garlic to a roasting tray. Drizzle with olive oil, season with salt and pepper and toss together. 3. Lay the sausages o top and roast for around 45 mins or until soft and caramelised 4. Meanwhile cook the pasta in salted water. Reserve a mug of pasta water before draining. 5. Cut up the sausages and add them back into the pasta pot 6. Transfer the roasted veg to a blender with the cream cheese and some pasta water. Blend until smooth and saucy. Add more pasta water as needed.  7. Pour the sauce over the sausages and pasta and stir everything together. You should only need around half of the sauce and can freeze the rest for another quick dinner. 8. Serve with grated parmesan and freshly chopped basil. #kidscaneatthattoo #healthyfamilyfood #healthyfamilymeals
